Apple Ice Cream

Jim shares the credit for this heavenly creation with my mother. It was her idea to use Apple Butter to accomplish the apple flavor without introducing an icy texture.

Fresh
   2 lbs. apples, Macintosh or other red variety
   2 cups half and half
   2-1/2 cups heavy cream
   4 egg yolks, beaten
   1/2 cup apple cider

Pantry
   2 cups granulated sugar, divided
   1/2 tsp. salt 
   1 tsp. ground cinnamon
   1/2 tsp. ground nutmeg
   1/4 tsp. ground cloves
   2 tsp. vanilla extract

Make ice cream custard
Place a large bowl in the refrigerator to chill. Using a double boiler, bring water to boil on the stove at high heat. Mix 1 cup sugar, half and half, heavy cream, salt, and egg yolks in the double boiler. Cook over medium heat, stirring constantly, just to boiling (do not boil). Continue to cook and stir until mixture is approximately 160 degrees-F. Refrigerate uncovered in the chilled bowl for approximately 1 hour or until room temperature.

Make apple filling (same recipe as apple butter)
While ice cream custard is chilling, peel and core the apples, and cut into 1/8-inch slices. Place one-quarter of the sliced apples into a blender along with 1/4 cup of apple cider and blend until smooth. Slowly add remaining apples and cider, alternating to maintain smooth consistency. Transfer blended apples to a large Dutch oven. Add cinnamon, nutmeg, cloves, and remaining 1 cup of sugar to the apples. Heat over medium heat until boiling. Reduce heat to low and simmer for 45 minutes to 1 hour or until mixture is thick. Transfer to a small container and cool in the refrigerator, should yield approximately 1 cup.

Add cream and freeze
Remove ice cream custard from the refrigerator. Stir in vanilla extract. Pour mixture into an ice cream maker and follow the manufacturer’s directions. Once the ice cream maker completes its process, add the apple filling 1/4 cup at a time and stir until evenly distributed. Transfer ice cream to a freezer-safe container and move to the freezer until completely frozen.

Serve
Serve alone or accompanying another dessert. Serve immediately after removing from the freezer.

    Thanks for all of the edits – I incorporated your suggestions. The book will be out by end of summer, but Apple Ice Cream is not in it…
