Macaroni Salad
Posted By Jill On April 9, 2011 @ 11:56 am In Side Dishes | No Comments
Macaroni salad was a staple side dish on the Glen-Mor Restaurant menu. I’m bringing this to a house warming party today – whatever is left after Jim finishes eating. I recommend using homemade French dressing [1]- the difference in taste is worth the effort.

Servings: 12
Fresh
2/3 cup French dressing [1]
1/4 small onion
3 stalks celery
1/2 green bell pepper
Pantry
1 lb. macaroni noodles
3/4 cup mayonnaise
2-1/2 tsp. salt, divided
1/2 tsp. ground black pepper
Prepare macaroni
Boil 3 quarts of water with 1 tsp. salt. Add macaroni and boil for 5 minutes. Drain macaroni and rinse with cold water to stop cooking. Place macaroni in a large mixing bowl and add French dressing. Mix to completely coat the noodles.
Prepare vegetables
Finely dice the onion, celery, and bell pepper, and set aside.
Mix salad
Add the onion, celery, bell pepper, mayonnaise, salt, and pepper to the macaroni. Stir to combine all ingredients.
Serve
Store in the refrigerator and serve cold.
