Mom’s recipe uses eggs to make a custard/rhubarb pie. It’s my favorite and with the crumbly topping it’s super easy to make. Takes forever to bake though:)

I’ve made it many times, always turned out perfect- no tapioca and it has a crumbly top. Maybe that makes it more like a tart than a pie.I’ll leave it up to the expert, you:)
