The Glen-Mor Restaurant sourced its ice cream from Deering, serving vanilla, chocolate, and raspberry sherbet. We made a homemade version for inclusion in the cookbook.
Servings: 1 quart (8 servings 1/2 cup each)
Fresh 4 cups raspberries 1-1/2 cups milk 1 lemon
Pantry 1 cup granulated sugar
Blend raspberries Blend raspberries, milk, and sugar [...]
The first Stawberry Shortcake, though quickly devoured, did not match the Glen-Mor Restaurant version. To improve we focused on the biscuit, starting with a classic buttermilk biscuit recipe. The traditional biscuit was too buttery, but a shortening substitute and addition of sugar resulted in the perfect Glen-Mor Restaurant replica for Strawberry Shortcake. The recipe [...]
These cupcakes will not be in the New England cookbook, but they are so wonderful I wanted to share. My two favorite flavors are chocolate and peanut butter, brought together in a perfect union in this recipe. I took these into the office to celebrate a colleague’s promotion and they were quickly devoured. The recipe [...]
I have a sweet tooth and I favor chocolate so much it is easy for me to turn down almost every non-chocolate sweet offering. So I wasn’t very excited about Graham Cracker Cream Pie – but I was pleasantly surprised with how this turned out, the buttery graham cracker crust is a perfect compliment to [...]
I expected Coffee Cake to be straight forward, an easy box to check-off our list. The result of the first attempt was a white cake base and a little butter cinnamon crumb on top – Jim said it is not true to the Glen-Mor Restaurant version, so we will try again in a few weeks.
[...]
When Jim told me to add Coffee Jello to the cookbook “to make” list, I thought he was trying to be funny. Our recipe list started with around 100 entries, and as Jim’s memory was triggered during our cooking sessions, it grew to over 150. I had never heard of Coffee Jello, and it [...]
Jim surprised me with this pie in progress when I came home from my work-out this afternoon. The result is not as firm as he would would like, so he plans to make another – I won’t complain. The revised and final version is very similar in ingredients, but the instructions and type of [...]
The Glen-Mor Restaurant’s Rhubarb Cobbler was a little different than this version, but this was still successful.
Servings: 8
Fresh 3.5 lbs. rhubarb 5 Tbsp. butter, cold 1 egg 1/4 cup milk
Pantry 1-1/2 cup granulated sugar, divided 2 Tbsp. instant Tapioca pudding 1 cup all-purpose flour 1-1/2 tsp. baking powder 1/4 tsp. [...]
The biscuits are going to be a challenge. Tonight’s first attempt was more cakey-cookie than biscuit. One problem is likely the expired baking powder, which I will replace in my next market trip. The strawberries and construction match the Glen-Mor version, so round two will focus on biscuits and update the ingredients.
Servings: [...]
The Glen-Mor Restaurant used a pre-made cherry pie filling, but with cherries in season I wanted to try to upgrade the recipe to all fresh ingredients. Even though I resist opportunities to add kitchen tools to my crowded cupboards, I did buy a cherry/olive pitter for this recipe. The first attempt required a few [...]
