Jim loves mashed turnips – an easy and versitile side. I served it tonight with Broiled Swordfish and the two of us ate four servings.

Servings: 4
Fresh
5 medium turnips
2 Tbsp. butter
Pantry
1 tsp. salt
1 tsp. ground pepper
Prepare turnips
Peel turnips in place in medium sauce pan, cover with water. Bring to a boil and crack pan cover to let steam escape. Boil for 15 to 20 minutes or until turnips are tender when pierced with a fork. Drain boiled turnips completely and wipe sauce pan dry for reuse.
Mash turnips and season
Place turnips in a mixing bowl fitted with a wire whisk or a food processor with a metal blade. Process until smooth. Return mashed turnips to the sauce pan and warm over low heat. Add butter, salt, and pepper, and stir to combine. Taste and adjust seasonings as needed.
Serve
Serve approximately 3/4 cup mashed turnips per person as a side dish.
