Chocolate Cream Pie I

Jim surprised me with this pie in progress when I came home from my work-out this afternoon. The result is not as firm as he would would like, so he plans to make another – I won’t complain. The revised and final version is very similar in ingredients, but the instructions and type of [...]

Bran Muffins

Jim made these muffins this evening and they are wonderful. He said he rarely ate them growing up, but I predicted correctly that his tastes have matured (aged).

Servings: 8

Fresh 1-1/4 cup milk 1 egg

Pantry 1-1/4 cup all-purpose flour 1/2 cup sugar 1 Tbsp. baking powder 1/4 tsp. salt 2 cups [...]

Lobster Stew

Servings: 4

Fresh 1 lb. cooked Lobster meat 1/4 cup Clarified Butter 4 cups milk

Pantry 1/2 tsp. salt Dash paprika, optional Oyster crackers

Saute lobster Melt Clarified Butter in a medium pot over medium heat. Add cooked lobster meat and saute in butter for several minutes, until butter turns red. If using all tail meat [...]

Rhubarb Cobbler

The Glen-Mor Restaurant’s Rhubarb Cobbler was a little different than this version, but this was still successful.

Servings: 8

Fresh 3.5 lbs. rhubarb 5 Tbsp. butter, cold 1 egg 1/4 cup milk

Pantry 1-1/2 cup granulated sugar, divided 2 Tbsp. instant Tapioca pudding 1 cup all-purpose flour 1-1/2 tsp. baking powder 1/4 tsp. [...]

Strawberry Shortcake

The biscuits are going to be a challenge. Tonight’s first attempt was more cakey-cookie than biscuit. One problem is likely the expired baking powder, which I will replace in my next market trip. The strawberries and construction match the Glen-Mor version, so round two will focus on biscuits and update the ingredients.

Servings: [...]

Blueberry Muffins

The Glen-Mor Restaurant used a base muffin batter and mixed in different fillings to make blueberry, cranberry, date, and apple muffins. The first attempt at Blueberry Muffins required a little tweaking because I used a a few too many blueberries. The final recipe is easy to make with perfect results. We will make the [...]

Cherry Pie

The Glen-Mor Restaurant used a pre-made cherry pie filling, but with cherries in season I wanted to try to upgrade the recipe to all fresh ingredients. Even though I resist opportunities to add kitchen tools to my crowded cupboards, I did buy a cherry/olive pitter for this recipe.  The first attempt required a few [...]

Broiled Scallops

Broiled Scallops is an easy weeknight meal. With the frequency I’m using Clarified Butter these days, I make it in bulk and keep it in the refrigerator. These didn’t get the nice brown sear that I like to see on scallops, so I tried a second attempt of Pan-Fried Scallops.

Fresh 1 lb. [...]

Cherry Cheesecake

Cheesecake was not served at the Glen-Mor Restaurant and won’t be included in the current cookbook project, but this dish came out so well I wanted to share. I used leftover fresh cherries after the recent Cherry Pie. I baked this cheesecake for a function at work, following Dorrie Greenspan’s recipe in Baking: From My [...]

Shrimp Bisque

The Shrimp Bisque first attempted yesterday was a complete failure. The base tasted like celery, the shrimp possibly spoiled, and we threw out everything. We started fresh today, with fresh ingredients and a renewed determination to complete this recipe – met with success.

Servings: 4

Fresh 1 lb. shrimp, unpeeled 5 Tbsp. butter, [...]
