Sandwich Bread

This loaf uses the same base recipe as the Dinner Rolls and makes a perfect bread for sandwiches.

Fresh
1 cup milk
1/4 cup (1/2 stick) butter, softened
3 eggs

Pantry
1/4 cup granulated sugar
2-1/4 tsp. instant yeast
2 tsp. salt
3 to 4 cups flour (12 to 16 oz.), divided

Scald milk
Bring milk to boil in a small saucepan and heat until scalded. Add butter and sugar, stir to dissolve. Remove from heat and let cool to room temperature.

Make dough
While milk mixture cools, beat eggs in a small mixing bowl and set aside. In a large mixing bowl, combine the cooled milk mixture with 2 cups of flour, then add eggs and yeast and stir until combined. Slowly additional flour and mix until the dough forms and pulls away from the side of the bowl. Generously sprinkle flour on countertop and turn-out dough to knead. Knead for 5 minutes adding flour to prevent dough from sticking to hands and the counter. Dough is ready when is springs back quickly if pressed with a floured finger.

Rise dough
Transfer dough to a clean bowl coated with cooking spray. Cover with plastic wrap and place in a warm place until double in size, about 1 hour.

Shape loaf
Turn out dough on flour-dusted counter and push out the air. Fold into a rectangle, place in a greased 8-1/2-inch x 4-1/2-inch x 2-3/4-inch loaf pan, cover with plastic wrap, and let rise until doubled, about 1 hour.

Bake loaf
Preheat the oven to 375°F. Bake loaf for 30 minutes, or until bread is golden brown. Internal temperature should be 190°F when done.

Serve
Let cool completely and slice.
