Jim made these muffins this evening and they are wonderful. He said he rarely ate them growing up, but I predicted correctly that his tastes have matured (aged).

Servings: 8
Fresh
1-1/4 cup milk
1 egg
Pantry
1-1/4 cup all-purpose flour
1/2 cup sugar
1 Tbsp. baking powder
1/4 tsp. salt
2 cups bran cereal, such as All-Bran
1/4 cup vegetable oil
Soak bran
Preheat oven to 400 degrees-F. In a large mixing bowl, combine bran and milk and stir. Let soak for several minutes.
Mix dry ingredients
In a small mixing bowl, combine flour, sugar, baking powder, and salt.
Add wet ingredients
Add egg and oil to the bran and mix. Add flour mixture to the bran and stir until just incorporate. Spray muffin pan with cooking spray. Divide batter among 8 muffin tins, each tin will be close to full.
Bake
Bake muffins for 20 minutes or until inserted toothpick comes out clean.
Serve
Let muffins cool and serve immediately or store for several days in airtight container.
