Apple Cinnamon Muffins I

Jim said these muffins are not exactly true to the original Glen-Mor Restaurant version, but he likes my version better, so I am calling this a success and marking these muffins complete. Okay, I will make them again because I am still determined to achieve authenticity. Only 70-something recipes to go….

Strawberry Cream Pie

Tonight we served the first of many cream pies at a dinner party.  Jim suggested a few tweaks, reflected in the ingredient below, but I am putting off making another Strawberry Cream Pie until we complete the many other pies on our list.

Servings: 8

Fresh 2-1/2 lbs. strawberries, divided 1 Pie Crust 1 cup [...]

Herbed Sour Cream Sauce

This is a sauce of my own invention as an alternative to Tartar Sauce, not found on the original Glen-Mor Restaurant menu. The sauce on its own is tangy and is a great accompaniment for Crab Cakes and Cod Fish Cakes.

Servings: 1 cup

Fresh    1/2 cup sour cream    1/2 lemon    [...]

Whipped Cream

Whipped Cream is used on many Glen-Mor Restaurant desserts, including Strawberry Cream Pie. The trick to good Whipped Cream is to work with a cold bowl.

Servings: 1 pie

Fresh 1 cup heavy cream

Pantry 3 Tbsp. Confectioners’ sugar 1 tsp. vanilla extract

Beat to soft peaks Place a medium mixing bowl in [...]

Macaroni & Cheese

Jim took charge of Macaroni and Cheese, and found the right combination of ingredients on the second attempt – it was delicious.

Servings: 6

Fresh 4 oz. sharp cheddar cheese, coarsely grated, divided 4 oz. double gloucester cheese (or substitute with a mild, yellow cheddar) 2 oz. Fontina cheese, coarsely grated 2 Tbsp. butter 2 cups [...]

Spinach

I love spinach and this version of the Glen-Mor sidedish is easy to prepare.

Servings: 4

Fresh    2 lbs. (2 bunches) spinach    2 Tbsp. butter

Pantry    1 tsp. salt

Prepare spinach Trim stems and rinse spinach, do not dry.

Cook spinach Place the wet spinach leaves in a large stock pot. [...]

Macaroni Salad

Macaroni salad was a staple side dish on the Glen-Mor Restaurant menu. I’m bringing this to a house warming party today – whatever is left after Jim finishes eating. I recommend using homemade French dressing – the difference in taste is worth the effort.

Servings: 12

Fresh    2/3 cup French dressing    [...]

Brownies I

These brownies are excellent, but Jim said these are not “cakey” enough to match the Glen-Mor Restaurant version, which means we will be making more brownies. But for tonight, we will be enjoying these.

Servings: 36

Fresh   10 Tbsp. (1-1/4 stick) butter    2 eggs

Pantry    1-1/4 cup granulated sugar    3/4 [...]

Apple Oat Muffins

These muffins were not on the Glen-Mor Restaurant menu, but they are perfect for a rainy day like today, filling the house with apple and cinnamon aromas. For a sweeter taste, increase sugar from 2/3 cup to 3/4 cup.

Servings: 6 large or 12 small

Fresh    1 lb. apples    1/4 cup [...]

Barbecued Beef Ribs

I do not like ribs – so we invited over a guest and along with Jim the ribs were finished off and appreciated by those who enjoy the meat on the bone.

Servings: 4

Fresh     2 lbs. beef back ribs     2 cups Barbecue Sauce, divided

Prepare ribs Preheat oven to 350 [...]
